...and you need to dump your ISP because they are having constant
outages...how have you handled it? I am trying to figure out, how to migrate
these sites, and keep the email flowing, and have no loss.

First job - lower the ttl to something ridiculously small (1 or 2 minutes)  
at your name servers.

Then wait for a period at least as long as the original ttl before doing  
anything at all.

The rest rather depends on the current set up. perhaps ...

transfer the mx records late Friday afternoon.

wait till your clients tell you incoming mail (on the old server) has  
dried up.  alter any other relevant DNS records and give them details for  
setting up their client apps on the new mail server.  bingo - all mail  
should be present and correct.

unless you have complete control of every detail you cannot do this  
without keeping your clients in the loop.
