I'm planning to set up SpamAssassin with a Bayes filter. Looks like I
need to forward some examples of spam and ham to a special email address
which SA then checks.
I think this is beyond my average user ;) Is there a webmail program
that I can configure to silently forward messages marked as junk to a

SA works on the server level before it reached the webmail interface, so
you can set up a filter to do specific actions (drop it into a folder,
forward, auto-delete, etc.), but that just depends on the normal
features of the webmail program. I'm not aware of any that will
forward based on the email being flagged or not (which wouldn't have to
relate to SA), but there might be one.
