My wife and I quite frankly think there is a good chance our emails and
IM'ing is being monitored.
We have been using googletalk. None of the IM services are encrypted.
I know there are add-ons for all the major IM services, but quite
frankly my spouse is not the technical type and a solution needs to be

I don't think we need NSA strength encrypting.
Our goal is a secure chat, nothing more.
I host a number of sites and have access to all the normal stuff,
mysql, php, yada yada yada. And I can program.

If you both use a universal client like Trillian Pro 3.1 (see:
http://www.trillian.cc ) you can enable fully secure 128bit encrypted
conversations over any network (MSN, ICQ, AOL/AIM etc). It works really
well. It only works if both of you have the same version of Trillian
installed; if you dont it'll just revert to a standard protocol for
whichever network you are talking on. It's also a great way to collect
together all your chats rather than having 3 or 4 different chat
program open at once.
