You don't explain what the more general case is. For example, will the
URLs to be redirected always start with '/late-deals/'? When you redirect
them, will you always include '/holidays/' as an extra path component?
The following redirect rule should perform the specific redirection
mentioned in your post, but without any further info I couldn't say
whether it will be useful to you in the general case.
RewriteRule ^/late-deals/[0-9]+/[0-9]+/[0-9]+/.*$ /late-deals/holidays/$1
