i have to create new field , with type text (500 caracters) , but the
max size of text is 255!!!

You can't in a shapefile; fundamental limitation of dBase. You might
be able to in a geodatabase; try a "memo" field.

What do you need to do with it? You can create two fields and put
them back together for most purposes. It is according to what you
want to do with the text, and how you need to put it in.
