Suppose I didn't explicitly state a value for an option in
sshd_config. How can I tell what the current value is ?

RTFM doesn't always work. Options change, and the man page
isn't always updated.

I was hoping to find a variant on the "-t" flag for sshd
which tells me what values it uses.

Does something like this exists ?

Please believe me when I say "I sympathize". But as with any other
software your best bet is three-fold:

    1: RTFM
2: Test it by leaving the option unset and seeing what happens.
3: Read The Fine Source (RTFS).

OpenSSH has been very good about keeping the manuals up-to-date on the
released software versions. With CVS downloads or add-on patches, you're
often SOL. This is normal with *all* software that actually is evolving
and updating.
