Hi Deborah,
ActiveSync on the device has an option which lets you select how many days
worth of email, you want to sync. The default option is "3 days". You can
change the default option to "All". However, this option is common across
all folders, so if you change this option to "All", you will be synching all
your email from all the folders you have selected to sync.
To change the default, go to ActiveSync on the device.
Select Menu -> Options. If you are synching Email with Microsoft Exchange,
select "Email" under "Microsoft Exchange" and click the "Settings" button.
The first option should be "Download the past" and it's value should by
default be "3 days". Change this option to "All". If you are synching Email
with the desktop, you should do the same steps, except select "Email" under
"Windows PC".
