I've noticed that PDFs have been ranking quite well in the search
results over the last year and have been wondering if Google may look
at the overall diversity of media types on a site for ranking

i.e. it may rank a site with html, pdfs, video and mp3s more highly
than a similar site with just plain html.  I'm presuming that all
other factors are roughly equal.

Any ideas?

I don't believe that there's a fixed policy at Google yet about this,
they seem to experiment with the SERPS.
