I have a domain that was down for 3 days, and is now back up. About 20
pages which were all top 10 search queries have vanished from the
index completely.  They're all flagged as errors within webmaster
tools, but are now fully functional. Is there anything I can do to
speed up the process of re-indexing ?

I've uploaded a new site map, but will adding the urls via the usual
route make any difference ?

Not really.  If there was an effective way of getting the search
engines to index a site sooner, everyone would be doing it and it
would become ineffective.  The main thing that gives you a good
ranking -- inbound links from high ranking sites with content
that compliments your content -- will determine how fast you get
re-indexed.  Other than that, you just have to wait.  

If I were you, I would be more concerned about why the domain
was down and how to avoid it happening again.

Besides making sure you have:
* an XML sitemap
* Incoming links
* Redirected old URLs to new

Not much you can do.

You may want to know that Google Errors
in Webmaster Tools can sometime last for
a very long time even when solved. See: /

Thanks Guy and Thomas,

I've uploaded new content, updated and uploaded my sitemap, and
submitted it to Google via webmaster tools.

Google has crawled the sitemap, but most of the dropped pages are
still missing from the index. I guess I'll have to just wait.

Thanks for the heads up on the Google Errors, I added "Gadgets" from
the webmaster tools page, this puts a neat dashboard of all the
webmaster tools relating to my domain, in a tab on iGoogle (which I
use as my homepage). I'll expect those errors to stay for a while. It
did also find some duplicate meta tags, and duplicate tiltle errors
which I wasn't aware of and have now fixed.
