specifically about UK coarse fishing. I therefore duplicated the page at
www.example.com/uk-coarse-fishing.htm . I used a .htaccess 301 redirect from
/fishing.htm to /uk-coarse-fishing.htm which works perfectly.
The question I have from a pure SEO perspective is do I leave the duplicate
content on the old page, should I change it, or simply delete the old page ?

Delete it. The point of having the redirect in the .htaccess file is
that when a spider comes looking for the file it passes theough the
.htaccess file first and thus is directed to the new page before it's
got anywhere near the old one. So the old one can go.
