Doctrine, but I'm not sure I'd want to use something that wants me to
create a new Query object for fetching a single record... it just seems
I'd prefer something that could generate database tables from model
definitions (like Doctrine).

You may want to take a look at Metastorage. It is tool that generates
self-contained ORM classes from a model definition. It also generates
database schema definition files and a special class to install it or
upgrade the schema when you changed your model tables.
Metastorage has its own Object Query Language. It can generate class
functions that execute the queries and return the results without making
you to use query objects to compose queries at run time, just like you want.
