What is the xeon like for overclocking in dual configuration?
Is it easy to keep them cool - if so how?

Whilst I built my own pc's 10+ years ago, I have not done so recently,
but since I have been given a couple of 3.06 Ghz  xeons, it seems the
obvious thing to do.

I'm mainly interested in writing my own software and using numerically
intensive maths software - I have no interest in games.

Biggest issue with a dual Xeon setup would be finding a motherboard with a
good set of overclocking features in the first place. Server boards don't
tend to go too much on that sort of thing.

Have a look in this forum. There are some people
here that enjoy the challenge of overclocking Xeons.
It helps to have the right starting materials, like
maybe some LV Xeons. And a motherboard with the
necessary controls to make the overclock possible.
