So I had a sticky key, but in trying to unstick it, I pulled it off
the kb and bits flew everwhere before I had a chance to see what
fitted where.

It's a dell laptop; anyone know where I can find a picture of how the
two rectangular bits pivot together under the key?

You could, carefully this time, take another key off. After all, if the
worst comes to the worst a keyboard with two broken keys isn't actually
much better or worse than one with one.

But generally the bits of plasitc make a parallel motion device - a bit
like a clothes drying rack. So when you push down on one edge, the bits
of plastic form a cross so that the opposite edge has to go down by the
same amount.
