If a user is browsing to an SSL website and the browser is set to cache
encrypted pages and the website does not disable caching, can and will
the pages be cached on a proxy server if the user is connecting via a
proxy?  If so, will the pages be encrypted on that server or visible to
anyone with access to the proxy server?

It depends on how this proxy is implemented. If the proxy just does
not proxy HTTPS (as most do), of course not ;-) If the proxy fakes
the endpoint to endpoint SSL tunnel by doing man in the middle and
having an SSL tunnel from client to proxy and a second from proxy
to webpage, then yes.
