For Mail, i.e. GNUPG / Enigmail / Thunderbird.
For your files, i.e. http://www.truecrypt.org (if you're using Windows).

"Almighty Father, who wilt hear the prayer of those that love Thee, we pray
Thee to be with those who brave heights of Thy heaven and who carry the
battle to our enemies. Guard and protect them, we pray Thee, as they fly
the appointed rounds." - Chaplain William Downey, prayer for the Enola Gay.

There are some good options out there, and the best choice depends
a bit on what you want to accomplish.  If you want to encrypt files
and data on disk, some of the ones you have mentioned work well.
Personally, I use BestCrypt from Jetico, since it allows me access
to the data both when I boot into Linux or Windows on my dual-boot

I have a more involved article in my blog here, which lists some
of the advantages of this type of solution.

Hope this helps...
