Yep, that's the question: is there a way to turn OFF the automatic
update function from Microsoft Security Essentials?

I've googled around a little but ended up confused. If I understand
well, the only way to disable this, is to disable the complete
Windows Automatic Update function -- can anyone confirm this? Or are
there other ways?

Maybe I'm not understanding the question properly.  I didn't follow
all of the thread, but in Control Panel | Security Center is says:

Options for setting up Automatic Updates on your computerTo choose
when and how updates will be delivered to your computer, you have four
options:

Download updates for me, but let me choose when to install them

To receive alerts, you must be a member of the Administrators group
for your computer. When you are connected to the Internet, Windows
finds and downloads updates in the background you are not notified or
interrupted during this process and the updates do not interfere with
other downloads.

After downloading is complete, the Windows Update icon  appears in the
notification area and an alert pops up, letting you know that the
updates are ready to be installed. To review and install available
updates, click the icon or the alert. YOU CAN INSTALL ALL OR SOME OF
THE AVAILABLE UPDATES.

I assumed the OP is aware of what you say. I understood him/her to mean
keep the automatic update option but not to include MS Essentials. It's
a trivial issue. Even when completely automatic, you are still asked
before installing certain updates, but MS probably feel essentials is an
update one wouldn't normally decline.
Personally I leave the machine in automatic update mode. I do periodic
image backups but have never had to revert to an earlier version due to
updating.

You're both more or less correct, I guess. By now, I've learned
that the thing is, even with the Windows automatic update function
completely turned off, Essentials STILL updates automatically. It
functions seperated from the "normal" Windows Update, but ... it
DOES rely for updating it's virusdatabase on the Windows Update
Service.  

So by completely disabling the Windows Update Service, I also
disable the automatically updates by MSSE. And it might seem a
drastic solution, but that's OK; it's fine by me.

No, don't get me wrong: I DO want the updates - for both Windows OS
and MSSE. I just want to be able to download them MANUALLY, that's
all. For Windows OS, that has always been a setting in the
preferences (and has always been my choice), but MSSE didn't have
this option.

So with this solution both can be achieved.
