ActiveSync cannot be uninstalled. It is installed in rom. Also, ActiveSync
stores files and registry settings on your device and your desktop that are
kep aligned. The registry settings and files are not documented so there is
no easy way to make sure you have a backup. The closest tool I have seen is
Sprite Software's Backup which can backup your whole device to a flash card.
