I need to have a solid understanding of ArcGis 9.1(Esri) software.

I have a basic understanding of GIS concepts, but am having trouble
understanding the step-by-step software, along with creating maps from
scratch. Can anyone advise a good, easy to understand text book for
beginners? At this point I need to have a solid understanding of the ESRI
software.

There's a book from ESRI, comes with a 180 day trial version:
