First thing you do is buy, borrow, or steal, no scratch that last one, a
backup option for your Epix. Don't see one included on mine. You could use
MSs My Phone cloud service. It pulls most everything out of the PIM apps on
the phone, and it is free. You should be able to install it from the web
directly. go to the site and it will walk yoy through sending a link to your
phone....etc...

There are other third party ones like SPB Backup that backup the whole
device and can restore pieces if you need to. Just make sure the stuff you
don't want to lose isn't only in the Epix memory.
From that point, if you have Outlook set up, and sync for the first time,
the process SHOULD combine what is in Outlook and what is on the phone, or
at the very least ask if you want to over-write the phone or not. Not in
your case. If Outlook is empty, it will seem like it is transferring to
Outllook since the something in the phone plus the nothing on the desktop
equals the same something in both places. There has never been the option on
an initial sync to over-write the desktop, just combine or overwrite the
phone.
