which GIS-stanards (like OGC-standards or ISO / TC 211) are supported
by GRASS?

It depends what you mean by "support". Practically any GIS is capable
of implementing ISO TC211 standards such as those for Feature
Catalogues, Symbolization, Data Communities, Metadata and many more.
As these are all based on a fairly simple data model, they can be
implemented within any reasonably capable database. ISO standards are
"What to do" not "How to do it" - they set out the rules within which
you operate, and in general are very neutral about data formats and
similar implementation specific matters. OGC, however, is more "How to
do it" than "What to do", and of course results in more prescriptive
standards, such as WFS, WMS and so on. Both approaches are necessary,
and this is acknowledged by the working relationship between ISO and
OGC. I can't tell you whether GRASS can manage things like WFS and WMS
but the raster based nature of GRASS will not make the former easy.
