'unwanted services' depend on what you want. anything you don't want is
unwanted. this depends on your organization and its needs. how to stop
them depends on which ones they are and what else depends on them.

Use the Security Configuration Wizard
What you indicate is needed is precisely one of the design
objectives of the Security Configuration Wizard.

You can use Group Policy computer configuration\Windows settings\security
settings\system services to manage what services can run on domain
computers. As Roger said the Security Configuration Wizard is great for
locking down Windows 2003 servers based on role and you can use that
information to help plan your Group Policy settings. The Windows 2003 Server
Security Guide will also give you guidance on services based on server
