So this might sound dumb.... I know SP2 for Server 2003 is all
encompassing that it can be applied to both SP1 and R2. However,
since if you put it on SP1 it DOES NOT take your server to R2 or add
the features of R2, what happens if you go from SP1 to SP2 and then
later decide you want to go to R2? Can you apply R2 after SP2 has
been installed?

SP2 will not upgrade Windows Server 2003 to Windows Server 2003 R2..
SP2 does apply updates to R2 components of Windows Server 2003 R2...

So...if you have a Windows Server 2003 non R2 system and install SP2, and
then later install the R2 upgrade, you may need to reinstall SP2

Thanks, thats what I was thinking and hoping wasn't going to be so! I
have a few servers that I'd like to upgrade to R2 in the next couple
months and didn't want to take the chance of having to install SP2
over itself after the upgrade.

Can this installation be slipstreamed, as can be done with XP?

Thats a good question actually! I personally don't have much
experience with slipstreaming so I probably can't answer that one.
But I think after getting more info on R2 and realizing that updating
the DCs will be tough enough. I'll definitely go the route of
updating to R2 and then SP2. Luckily, our environment should be good
to go for a few months without too many worries about needing SP2 out
there, plus I'd rather not rush into a Service Pack and this just
helps me get more time to let everything work itself out.
