I use an IMAP account with my mobile phone and laptop. When I send e-mails
from the mobile phone, no copies seem to be stored on the phone.

I have checked, and the e-mails are sent (and received). No copies are
stored on my e-mail server either.

Needless to say, this does not happen when I send e-mail from my laptop
using the same IMAP account. Then the e-mails are properly stored in the
sent messages folder, and on the e-mail server.

Is it possible you're using your mobile operator's SMTP server instead of
your ISP's? Some mobile operators block the use of "outside" SMTP, and
force you to use their own. This would explain why the emails aren't
showing up on your server, since it didn't actually send them.

Thanks for replying, Todd.

No. IMAP is used for both in- and outgoing traffic. And none of the sent
e-mails get stored locally on the mobile phone either, which seems strange.
