Can anyone recommend a good linux based host that offers some type of
redundant 100% uptime? Does such a thing exist? Is there a way to move
your website to a temporary server while account maitenance is
performed on the main server?

There is no such thing as 100% uptime. If anyone guarantees it, walk
away.

This host (link below) has invented a system called "ServMover" which they
claim your account can be "automatically moved if needed to emptier or
larger servers with absolutely no downtime and 100% transparency."

100% uptime is practically impossible :P

However, my own host recently updated their whole set of servers at the
data center with something called Network Attached Storage (NAS). This
means your data is stored on multiple fully operational servers, and when
a request arrives, it is directed to the server with the least load.
Should one server fail, in a matter of a minute or so, the NAS detects
that the server is down and routes requests to the remaining operational
servers. At least, that's how I understand it :)

I've never had a major outage, or even a major problem hosting with
Netfronts since 2001.

Rackspace - They're the leaders for managed servers and guarantee 100%
uptime. But they're pricy, a regular server will cost five hundred bucks.
