When I am in the first stage of installing Windows XP Media Center (The DOS
Looking blue screen part that you accept the licensing agreement and select
the partition layouts) it tells me I am installing XP Media Center, However
I am never prompted for disk 2 and when I am finished I end up with just
"Windows XP Professional"

What am I doing wrong? Can someone help?

Did you follow all the instructions here?
http://www.michaelstevenstech.com/cleanxpinstall.html

The most important thing is entering the correct Product Key. Only Media
Center keys asks for Disk 2.
The order is Disk1, Disk 2, and Disk 1.
