I setup a share on the server called "USERS". I then let the system create
and individual user folder for each user. At this point for testing, I am
manually redirecting the My Documents folder to their network share, but for
some reason, each can see all of the files in each users home directory if
they type the UNC path to \fs3\users\*

How can I reset this so that only the assigned user can see or access the
files in their respective shares?

You could make this less likely by making this a hidden share, like
"users$". There shouldn't be a problem with other users being able to see
the other user's folders, as long as they are premitted so only the owner
account and domain admins have any kind of access to the folders.
