I am currently connected to my work laptop to sync outlook via bluetooth. If
I use this connection to check scores on ESPN at work, will IT be able to
see what sites i have visited because my connection is through my laptop
computer?

If you mean does ActiveSync keep a list of sites visited by Internet
Explorer on the device laying around, no. Monitoring software installed on
your PC might be able to track that, however.

so monitoring software on my laptop could possible track sites visited on my
PPC? I'd like to know how that works. Thanks

ActiveSync acts as a pass-through connection for the device, so all of the
network traffic that the device sends goes through your PC. All a piece of
tracking software would have to do is capture IP addresses visited by the
network adapter connected to the Internet (the one IE on your PC uses when
it visits the Internet), and use reverse DNS to get the site names back.
Very simple for anyone smart enough to capture any other sort of traffic
from your PC.
